Raspberry Bliss Cups – Simple to Make and Delicious!

Organic Vegan Chocolate ( We Like Lubeca)
Organic Peanut Butter
3 Tbsp White Chia Seeds
1.5 Cup Lemon Juice
3 Cups Frozen Organic Raspberries

Melt chocolate gently and pour into small cupcake or chocolate moulds, allow to set and release from moulds.

Spoon a little organic peanut butter into the base of each chocolate vessel.

Create a raspberry chia jam by blending the defrosted berries, lemon juice and chia. Leave to set for at least an hour. If the texture is too runny, add more chia seeds.

Spoon chia raspberry jam into the moulds and garnish with seasonal fruit.



Sounds delicious and not too fancy pantsy. I could actually make these, and it’s possible that it may not take the entire weekend to achieve! Oh hang on, I just had a reread. 1 and a half cups of lemon juice! Are you serious? I’m pretty certain that is meant to read 1.5 cups of water with perhaps the juice of 1 1/2 lemons.

Yes – we checked with our chef Azusa – it’s not a typo that is how much she uses. She says it’s not exact sometimes she adjusts as she goes to get the right consistency with more or less chia seeds… it’s a tart contrast. We sell them in the cafe cabinet if you ever want to try one before you commit to the recipe. Thanks for taking the time to check it out.
